I am really trying to mix up the types of treats I am presenting to you, as not everyone wants sugar cookies and gingerbread men. Sometimes, people want mini muffins!
Adorable, sweet (but not too sweet) and dotted with chocolate (the best!) these muffins are bite sized and definitely a crowd pleaser. And even better, I was able to bake all 48 at once thanks in part to my wonderful 48 mini muffin tin I snatched (well, I payed of course) from Target a few years back from the clearance section…Heyy-o!!!
I am bringing you that perfect lil cake-like package that is suitable for breakfast, snack, lunch, second snack, dinner, dessert, and late night snack. Pretty much muffins are perfect for any time, occasion, and/or event.
You feel a bit gurgly in the the stomach area? Muffins.
You need a dish to pass at a potluck? Muffins.
You need a quick on-the-go breakfast? Muffins.
You need a post-workout snack? Muffins.

This week has been a whirlwind of a week.
From applying for jobs, moving into a new apartment, having a phone interview, an in person interview, my Grandpa’s birthday, a work party, putting the new apartment together, and getting a job offer…whew! I just haven’t found the time to put these muffins up on the blog!
It’s been a long week, and I took last week off due to graduating, but now I am back and in full force!
Steven got some rhubarb from a coworker last week, of which I immediately turned into compote, and keeping it super simple as well. This recipe consists of only 5 ingredients…and that’s including water. We are keeping it all natural too by using honey as a sweetener and cornstarch as a thickener. Add some water here and there and BAM!…compote.
…with luscious chocolaty frosting.
Chocolate is one of those essences of life that somehow seem to make everything better. Having a bad day? Grab the nearest chocolate bar (and perhaps a glass of wine) and POOF! All of sudden life seems magically brighter and easier to manage.
I am the ULTIMATE freak when it comes to all things Fall. No, really. This is a fact.
I mean, don’t get me wrong, I enjoy Summer and all, but once it starts creeping to an end, and I can see Fall just around the corner…well, Summer can GTFO! Like right NOW!
Nobody likes that friend that just keeps hanging around. You know who I’m talking about, the one that keeps awkwardly trying to talk to you when everyone else has already left. You’ve tried turning off the music, shutting off the decorative lights, and sported a giant yawn, as in, “Hey Dude, I’m tired.”, but nothing. They just can’t get the hint.
